Hey everyone, so I’ve been trying to get more fruits and veggies into my diet, and I thought I’d share my little experiment with you all. I focused on pink-colored ones ’cause, why not? It’s fun, and they say different colors mean different nutrients, right?
So, the first thing I did was hit the grocery store. I grabbed some pink grapefruits, some beautiful red-fleshed dragon fruits, and a bunch of radishes ’cause they looked so vibrant. I also picked up some beets ’cause even though they are more red or purple, they can have a pink hue sometimes, so I figured they’d count.
Next up, I started brainstorming how to eat all these. I’m not a big fan of just munching on raw veggies, so I decided to get a bit creative.
- Smoothies: I made a fantastic pink smoothie. I threw in some dragon fruit, a handful of strawberries and added a bit of honey and ice. It was super tasty and refreshing, perfect for breakfast or an afternoon snack.
- Salads: I tried to make my salads more exciting by adding different textures and flavors. I sliced up some grapefruits and radishes, tossed them with some mixed greens, and drizzled a light vinaigrette on top. I also roasted the beets and added those in. The roasted beets were a game-changer.
- Snacks: Instead of reaching for chips, I started snacking on sliced radishes with a little bit of salt. It’s surprisingly satisfying! And for a sweet snack, I’d have a bowl of cut-up dragon fruit.
- Side Dishes: For dinner, I’d sometimes make a simple slaw with grated radishes and a light dressing. It went well with grilled chicken or fish.
After doing this for a couple of weeks, I gotta say, I do feel better. I have more energy, and my skin looks a bit brighter. Plus, it’s just more fun to eat colorful food!
I also did some reading while I was at it. Turns out, eating a variety of colors is a good thing. They say that different colored fruits and vegetables provide up to 25 different types of antioxidants and vitamins. I’m no expert, but that sounds pretty good to me!
So, that’s my little journey with pink fruits and veggies. It’s been a fun and tasty experiment. If you’re looking to add more fruits and veggies to your diet, I definitely recommend trying something like this. It makes healthy eating a bit more exciting!
