Okay, so, I’ve been trying to eat healthier lately, and a big part of that is cutting down on the junk food. But man, those cravings hit hard sometimes! So I started looking into low-fat vegan snacks. I wanted stuff that was easy to make, tasted good, and wouldn’t make me feel guilty after eating it.
First, I tried making some roasted chickpeas. I just tossed some canned chickpeas with olive oil, salt, pepper, and some paprika for a little kick. Then, I spread them out on a baking sheet and popped them in the oven at 400 degrees for about 20-30 minutes. They came out pretty crispy, but a little dry if I’m being honest. Maybe I overbaked them? I’ll have to experiment with the timing next time.
Next up, I whipped up a quick fruit salad. I chopped up some apples, bananas, and strawberries, and mixed them all together. It was super simple, but it really hit the spot when I was craving something sweet. Plus, it’s packed with vitamins and fiber, so that’s a win.

I also made some avocado toast. I know, it’s a bit basic, but hear me out. I toasted a slice of whole-wheat bread, mashed up half an avocado with some salt and pepper, and spread it on the toast. Then I sprinkled some red pepper flakes on top for a little heat. It was creamy, satisfying, and surprisingly filling. I used a ripe avocado this time and it was perfect.

Then I got a little more adventurous and tried making some baked sweet potato fries. I peeled and cut a sweet potato into fry shapes, tossed them with a little olive oil, salt, and pepper, and then baked them at 425 degrees for about 25 minutes, flipping them halfway through. They turned out pretty good! They were crispy on the outside and soft on the inside, and they satisfied my craving for something salty and savory.
All in all, it’s been a fun little experiment. I’ve discovered that it’s definitely possible to make healthy, tasty snacks at home without too much effort. I’m still learning, but I’m excited to try out more recipes and find some new favorites. If you guys have any suggestions, let me know!
