Okay, let’s talk about something I tried recently – making Hari Mirch, or as some folks call it, green chili pickle. It’s not as hard as you might think, and it’s definitely worth the effort.
First off, I gathered all the stuff I needed. This included a bunch of fresh green chilies, the main star of the show. I made sure they were nice and firm, not those soft, wimpy ones. Then, I grabbed some oil – just regular cooking oil works fine. Also, I picked up some vinegar, spices like mustard seeds, fenugreek, turmeric, and a few others that I had lying around in the kitchen. Salt, of course, can’t forget that.
Next up, I washed those chilies real good. Gotta get rid of any dirt or whatever’s on them. After they were all clean and dry, I slit each one down the middle, but not all the way through. Just enough so the spices could get in there and do their thing.

Then came the fun part – making the spice mix. I heated up a little bit of oil in a pan and tossed in the mustard seeds and fenugreek seeds. Once they started popping, I added the other spices and gave it all a good stir. After it cooled down a bit, I mixed it with salt.
Stuffing and Waiting
After that, I carefully stuffed each chili with this spice mixture. It was a bit fiddly, but hey, good things take time, right? Once all the chilies were stuffed, I packed them into a clean, dry jar. Make sure it’s airtight, you don’t want any unwanted stuff getting in there.
Then, I poured in enough oil to cover all the chilies. I also added a good splash of vinegar for that extra tangy kick. I sealed the jar tight and put it in a cool, dark place.
Now, here’s the hardest part – waiting. It takes about a week or so for the flavors to really develop. So, I just had to be patient. It was tough, I won’t lie, but trust me, it’s worth the wait.
Finally, the day came when I could try my Hari Mirch. I opened the jar, and the aroma that hit me was amazing. Spicy, tangy, just what I was hoping for. I scooped some out and had it with my meal. Boom! It added such a great kick to everything. It’s spicy, but not too crazy, and that tang from the vinegar is just perfect.
